PBFF quality inconsistency limits industry growth. Genome mining offers rational starter culture design for enhanced PBFFs. Genome mining identifies microbes with key traits (carb/protein/lipid metabolism, flavor, stress, vitamins), allowing us to use suitable microbes for the production of sustainable food products. Validated via controlled fermentation & plant substrates. Iterative optimization targets flavor, texture, nutrition, and safety. Conclusion: Genome-guided starters improve PBFF quality, consistency, nutrition, and scalability, supporting a sustainable food system.
