The study concludes that kefiran, particularly when extracted using hot water or ultrasound methods, shows promise as a natural detoxification agent for mycotoxin in plant-based milk, while also providing antioxidant benefits. This approach offers a potential solution to ensure product safety without compromising nutritional quality.
