Yeast cell walls from Saccharomyces cerevisiae, rich in β-glucans, mannoproteins, and chitin, represent promising natural carriers for probiotic encapsulation due to their biocompatibility and gastrointestinal stability. This study aims to extract and comprehensively assess the physicochemical and antioxidant properties of these carriers to optimize their application in protecting probiotics during processing and storage. Key objectives include isolating cell wall biopolymers via alkaline-acid extraction and characterizing composition through FTIR spectroscopy, morphology via SEM, thermal stability via TGA/DSC, and colloidal properties. The findings will advance sustainable probiotic delivery for functional foods, addressing viability challenges while leveraging GRAS-status materials
