A biopolymer film for visual fish freshness monitoring was developed using pH-sensitive Hibiscus sabdariffa extract in an agar-silk fibroin matrix. The anthocyanin-rich extract changes color with fish spoilage pH and exhibits antioxidant activity. Pure agar films are too moisture-sensitive, but adding silk fibroin reduced swelling and improved mechanical stability for wet conditions. This composite offers a sustainable, biodegradable platform for real-time, visual quality assessment of fish.
